Today, I present you with Banana Bread! This is not your average banana bread. You may have tried my banana bread before, but this one is new and improved. It’s really one of my favorite things to bake and it’s a true crowd pleaser. It’s my gluten free chocolate chip accidentally vegan banana bread. Say that three times fast. Last night I made modification, I subbed dates for sugar. I’ve been meaning to do this for a long time and yesterday was the day. This makes a real moist bread that requires a bit of cooling before cutting, but totally worth it. Some might call it more of a cake than bread, but that’s fine by me. The chocolate chips I found only by accident are vegan only if purchased at Trader joes or you could use Enjoy Life chips found a whole foods.
Gluten Free Chocolate Chip Vegan Banana Bread
What you will need:
3 ripe bananas- the riper the better
7-10 dates, plus 1/2 cup hot water- pureed until smooth
1 cup natural applesauce (nothing added)
1/2 c coconut oil- melted
1 teaspoon vanilla
1 teaspoon cinnamon
1 c rice flour
1 c almond meal
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4c-1/2c chocolate chips (Trader Joes)
Preheat oven to 375
In an electric mixer mash bananas and date mix, then add vanilla, oil and applesauce.
Next, sift dry ingredients together and combine with wet, careful to not over mix.
Fold in chocolate chips, then pour into loaf pan and bake for about an hour at 375. Checking at 40min depending on loaf pan. Insert toothpick to check doneness it should come out clean when bread is done.
