The funny thing is that “carbohydrates are ‘a nutrient for which humans have no absolute requirement.'” Something that Gary Taubes has been preaching since publishing his Good Calories, Bad Calories.

Well, given that this is the first time ever that I’ve been sugar free for more than about a day, I’d have to agree with the rats… my carb cravings have been major since this past Saturday… it certainly feels like I need them.
