Some alternatives to wheat

For the past week, I’ve been off of wheat / gluten… and I’ve found out that there are a lot of other people out in the world doing the same. I was mourning the loss of Sunday morning pancakes on Saturday, when I came across with a recipe for gluten free pancakes. Skeptical and expecting the worst (rubbery discs that would be better used as frisbees), I bought the ingredients and gave it a whirl. I was happily surprised (as was Julia and Dashel) when we found they were more than just edible, they were actually good. So if you’re thinking about going wheat-free, you can still have your pancakes and eat them too!
